Oyster crackers are covered and baked in a peanut butter toffee sauce, turning them into a crunchy, sweet and savory snack. You wont be able to eat just a handful!

Directions

  • Preheat oven to 400F. Line a cookie sheet with aluminum foil, then lightly coat the foil with non-stick spray. Set aside.
  • In medium saucepan, bring butter and brown sugar to a boil over medium high heat. Boil for 3 minutes (the mixture will bubble and get fluffy). Remove from heat and stir in peanut butter, cinnamon, salt and vanilla extract.
  • Stir in oyster crackers and spread crackers over the prepared cookie sheet as evenly as possible. Don’t worry if you can’t spread it out in a single layer.
  • Bake 2 minutes. Remove from oven and stir crackers, now smoothing out into a single layer.
  • Bake for an additional 3 minutes. Remove from oven and cool for 5 minutes.
  • Stir, to break up the pieces if they have clumped together, and cool completely. Store in an airtight container.
  • Serves: about 4 cups
