Description
Tonights recipe is inspired by cochinita pibil, a dish of marinated, slow-cooked pork from Mexicos Yucatán Peninsula. To achieve the dishs spectacular depth of flavor in a fraction of the time, were briefly marinating pork chops with fresh lime juice and traditional spices, including the bright red, earthy seeds of the annatto tree. Pink-tinged cara cara orange forms the base of a sweet and spicy salsa, while some of its zest brightens up our simple side of rice.
