    • 1/2 cup Rice wine vinegar

  • 5 pounds green mango
  • ½ cup rice wine vinegar
  • ½ cup apple cider vinegar
  • 2 cups sugar
  • ¼ cup Hawaiian salt or kosher
  • 1 package li hing mui, optional
  • 1 red food coloring, optional (adsbygoogle = window.adsbygoogle || []).push({});

Directions

  • Remove peel from mangoes and slice.
  • Place mango slices into jars or a medium size bowl, add li hing mui.
  • In a medium pot, add vinegar, sugar and salt and bring to a boil; stirring until sugar and salt are dissolved. Remove mixture from heat and add drops of red food coloring as desired; let stand. Mixture should be hot to touch, then pour over mangoes.
  • Cover and let cool. Store in refrigerator
