Pomegranate White Chocolate Sugar Cookies

• Produce

  • 1 cup Pomegranate arils

• Refrigerated

  • 1 Egg

• Baking & Spices

  • 1 1/2 cups All-purpose flour
  • 1/4 tsp Baking powder
  • 1/8 tsp Baking soda
  • 1 cup Granulated sugar
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract

• Dairy

  • 1/2 cup Butter

• Other

  • 1 cup White chocolate chunks or chips

Directions

• Preheat oven to 350 degrees. Line cookie sheet with parchment or silicone baking mat. Set aside.
• In large bowl, whip butter with sugar until light and fluffy. Stir in egg and vanilla. Scrape sides and mix again. Stir in dry ingredients until completely combined. Stir pomegranate arils in by hand gently.
• Scoop onto prepared baking sheet and bake 7-10 minutes or until edges look barely golden. You want these to stay chewy and not get crispy! Cool 3 minutes on baking sheet and remove to wax paper.
• In a small bowl, melt white chocolate and drizzle over cookies. Cool to room temperature until chocolate has hardened and serve. OR just eat them hot and fresh! I wont tell 🙂
• Store in an air tight container for up to 5 days…or eat them all up!
