Quick Crustless Quiche

Ingredients

• 6 slice bacon
• 4 oz swiss cheese, shredded
• 2 Tbsp butter, melted
• 4 eggs, beaten
• 1/4 c onion, finely chopped
• 1 tsp salt
• 1/2 c all-purpose flour
• 1 1/2 c milk

Directions

• 1In a skillet fry bacon over medium heat until evenly browned. Drain, crumble and sit aside. (I use my kitchen shears to cut bacon into small pieces before frying to save having to crumble later). 2Preheat oven to 350º and lightly grease a 9-inch pie pan. Line bottom of pie pan with cheese, then top with the crumbled bacon. 3Combine eggs, melted butter, onion, salt, flour and milk. Whisk or blend until smooth. (I prefer to use an immersion blender or upright blender) 4Pour into pie pan, covering cheese and bacon. (place on a cookie sheet for easier handling in and out of the oven) Bake about 50 minutes until top is lightly golden and knife inserted into center comes out clean.(center will be soft). Let stand 10 minutes before cutting.
