    • 2 tbsp Balsamic vinegar

Delicious Dairy-free food for Busy people

Ingredients

  • ½ Kilo carrots - washed/cleaned up
  • 2 Tablespoon Balsamic vinegar
  • 1 Tablespoon olive oil
  • 1 Teaspoon Salt
  • Half a lemon

Directions

  • Preheat oven to 180 C (350 F)
  • Combine all ingredients in a roasting dish - toss to coat
  • Place dish in oven and roast for an hour or so until completely tender - removing from oven every 15-20 minutes to re-coat in the glaze.
  • When you finally remove from the oven, sprinkle with a little lemon juice and toss again to deglaze the pan
  • Serve hot
