Roasted Beet and Blue Cheese Tart

Ingredients

• 1 package puff pastry, thawed
• 2-3 beets
• 1/2 cup olive oil
• 1 Tbsp Italian Seasoning
• Salt and Pepper
• 1 jar Litehouse Simply Artisan Blue Cheese Simple Seasons
• 1 Tbsp honey
• 2 Tbsp fresh basil, chopped

Directions

• Preheat oven to 425 degrees. Wash and trim tops off of beets. Wrap in foil and place in preheated oven. Cook for 1 hour or until softened. Unwrap and peel off skins. Slice into thin slices. Unfold puff pastry piece onto rimmed baking sheet lined with parchment paper. In a small bowl, whisk together olive oil and Italian seasoning. Brush onto puff pastry dough. Sprinkle a light layer of Blue Cheese Simple Seasons on top of oil. Top with sliced beets. Season with salt and pepper. Then, spoon additional Blue Cheese Simple Seasons on top of beets. Bake at 425 degrees for 25 minutes. Remove tart from oven and drizzle with honey and top with chopped basil. Enjoy while warm.
