Roasted Strawberry Margarita

Ingredients

• For the roasted strawberries
• 16 ounces (1 pound) strawberries, hulled and cut into quarters
• ¼ cup sugar
• For the margarita
• 2 ounces tequila
• 2 ounces roasted strawberries
• 2 ounces fresh lime juice
• ½ ounce simple syrup
• salt or sugar, for rimming
• lime slices, for garnish

Directions

• To make roasted strawberries: Preheat oven to 375 degrees and line a baking sheet with parchment paper. Place strawberries on baking sheet and then sprinkle with sugar. Bake for 25 to 30 minutes or until strawberries are fragrant and syrup has formed. To make roasted strawberry margarita: In a shaker, pour tequila and strawberries and muddle together. Add ice, lime juice and simple syrup to mixture and shake vigorously. Rim a glass with salt or sugar, fill with ice and strain mixture over top. Garnish with a lime wedge and serve immediately. This can also be doubled or quadrupled to make a batch for more people.
