In the vein of Christmas food gifting, I decided to make some infused herb honeys. They give honey an extra dimension of flavour and they are perhaps the simplest recipe I've ever put up on the blog. In fact I don't know if I could even call it a recipe! All you need is time on your side and if you start this week or next, you can be presenting your friends with a jar of herb infused honey just in time for Christmas. You just need a few sprigs of your favourite herb and some honey and you just let it steep for three weeks. That's all! And if you're in a hurry, you can gently heat the honey with the herbs to hasten the infusion process.
