These sausage and cheese mini muffins are so easy to make. They are so versatile and are perfect for breakfasts on the run, snacks or even canapés at a cocktail party.

Ingredients

500g/12oz sausage meat*
1 cup Bisquick*
2 cups shredded cheese
4 eggs

Directions

Brown the sausage meat in a frying pan. Use a fork to break up the clumps as the meat browns. Drain on a paper towel and allow to cool before mixing in the other ingredients.
Place the browned sausage into a mixing bowl and add the other ingredients. Mix well.
Spoon into mini muffin trays and bake at 350/180C for 12-15 minutes. Makes about 30 mini muffins.
