Crunchy, creamy and oh so delicious with hints of herbs and lemon. These simple and savory herb roasted mushroom crostinis with whipped goat cheese make a beautiful appetizer your family and guests will love!

Ingredients

  • 1 French Baguette or gluten free bread of choice {sliced into 16 pieces}
  • 4 Tbsp Extra Virgin Olive Oil
  • ¾ c Crimini Mushrooms, chopped
  • 1 c Arugula
  • 4 Cloves Garlic, finely chopped
  • 4 oz Goat Cheese
  • 1 tbsp Fresh Squeezed Lemon Juice
  • ΒΌ c Mixed Herbs: Fresh Rosemary, Chives, Thyme and Sage {or herbs of choice}, finely chopped
  • Sea Salt and Fresh Ground Pepper

Directions

  • Preheat oven to 350 and line a sheet pan with parchment paper.
  • Slice baguette and brush slices with olive oil mixed with salt, pepper and 1 clove chopped garlic. Bake for 15-20 minutes or until baguette slices are golden brown. Set aside.
  • In a large nonstick pan, heat 1 tbsp olive oil on medium heat. Add mushrooms and sear without stirring for 3 minutes. Then reduce heat and add arugula, remaining garlic and 2-3 tbsp fresh herbs; stir well for approximately 5 minutes. Set aside to cool.
  • In a bowl, food processor, or Kitchenaid whip the goat cheese with 1-2 tbsp fresh herbs and lemon juice. Whip until creamy and smooth.
  • Spread whipped goat cheese on the crostini, top with a spoonful of mushrooms, arugula, herbs, and a pinch of sea salt. Serve and enjoy!
