Ingredients

• 4 unwaxed lemons, the zest and the juice
• 200g / 7oz unrefined caster sugar
• 100g / 3½oz unsalted butter, cubed
• 3 eggs, plus 1 egg yolk

Directions

• Pop the lemon zest and juice, sugar and butter into a heatproof bowl. Place the bowl over a pan of simmering water, making sure the water isnt touching the bottom of the bowl. Gently stir the mixture every now and then until the butter has melted.
• Whisk the eggs and egg yolk and then stir them into the lemon mixture until all of the ingredients are combined.
• Cook for 10-15 minutes, stirring every now and then, until the mixture is creamy and thick enough to coat the back of a spoon.
• Remove the lemon curd from the heat and set aside, stirring occasionally as it cools.
• Once cooled, spoon the curd into sterilised jars and seal. Keep in the fridge until ready to use.
