A quick, healthy, and delicious family meal perfect for any night of the week.

Ingredients

  • 12 oz cooked chicken, chopped or shredded
  • 1-1/2 cups no sugar added pasta sauce
  • 1/4 cup Parmesan cheese
  • 3/4 cup part-skim mozzarella cheese, shredded
  • 1 Tbsp olive oil
  • 1/2 cup Italian-style bread crumbs
  • Fresh basil for garnish (optional)

Directions

  • Preheat oven to 350F.
  • Spray an 8 x 8-inch baking dish with coconut or olive oil spray.
  • Place the cooked chicken in the baking dish and add the pasta sauce. Mix together until combined.
  • Spread the cheeses on top.
  • In a small bowl, mix together the breadcrumbs with the olive oil.
  • Sprinkle the breadcrumb mixture on top of the cheese.
  • Bake for 25 minutes, until breadcrumbs are golden brown and casserole is bubbling.
  • Serve with some chopped basil if desired.
