Ingredients

  • 1 can organic chickpeas (15 ounce can, drained)
  • 1 can organic full-fat coconut milk
  • 2 tablespoons organic extra-virgin olive oil
  • 1 cup organic tomatoes (diced small)
  • 1/2 cup organic onion (diced small)
  • 1 tablespoon organic jalapenos (diced small)
  • 1 teaspoon organic ground cumin
  • 1 teaspoon organic garam masala
  • 1 teaspoon Himalayan pink salt
  • 1 teaspoon organic cilantro (finely chopped)
  • 1/4 teaspoon organic ginger (fresh, diced small)
  • 1/4 teaspoon organic ground turmeric

Directions

  • In a skillet, add the olive oil, onions, cilantro, cumin, garam masala, turmeric, ginger, Himalayan pink salt and saute on low/medium heat until the onions become translucent. Add the tomatoes, jalapenos and chickpeas and continue to stir on low/medium heat for 2 - 3 minutes. Add the coconut milk and continue to stir on low/medium heat for another 2 - 3 minutes. Adjust seasonings to your preference. Enjoy!
