Summer Corn, Tomato and Tortellini Pasta Salad

• Produce

  • 5 Basil, leaves fresh
  • 2 cups Corn, cooked
  • 1 clove Garlic
  • 1 cup Grape or cherry tomatoes
  • 1 Zucchini, large

• Condiments

  • 4 tbsp Lemon juice, fresh

• Pasta & Grains

  • 22 oz Cheese tortellini

• Baking & Spices

  • 1/8 tsp Black pepper
  • 1/4 tsp Salt
  • 1 Salt and pepper

• Oils & Vinegars

  • 1/3 cup Olive oil, Extra Virgin

• Dairy

  • 2 tbsp Feta cheese

Directions

• Combine all ingredients and whisk to combine.
• Cook tortellini according to package instructions. Once it has drained, drizzle a little olive oil or lemon vinaigrette over the pasta to keep it from sticking. Set aside to cool to room temperature.
• Once cooled, combine tortellini, corn, tomatoes, zucchini, feta, basil, and dressing. Toss to combine. Season to taste with salt and pepper. Serve immediately or refrigerate.
