  • 3 cups sweet kale salad mix
  • 4 ounces cooked king salmon
  • ⅓ cup quinoa
  • ¼ cup blueberries
  • 1-2 tablespoons cranberries and pepitas
  • For the Poppy Seed Dressing
  • ¼ cup regular Almond Breeze AlmondMilk CashewMilk
  • 2 tablespoons light mayonnaise
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon poppy seeds
  • ¼ teaspoon onion powder

Directions

  • Mix the salad ingredients in a bowl. In a small jar with a fitted lid, add the remaining ingredients, top with the lid screwed on tightly and shake well to emulsify. Drizzle over the salad and serve.
