    • 1 Peanut sauce [see note
    • 1 Sriracha sauce
    • 1 tbsp Thai fish sauce
  • Baking & Spices

    • 1 bag Coleslaw mix
    • 1 Salt and ground black pepper
    • 2 tsp Sugar
  • Oils & Vinegars

    • 1/3 cup Canola oil

Ingredients

  • 1 to 1-1/2 pound beef skirt steak [See Note]
  • For the marinade:
  • ½ cup coconut milk
  • 2 limes, juiced and zested
  • 1 tbsp Thai fish sauce
  • 2 teaspoons grated ginger root [See Note]
  • For the slaw
  • 1 bag chopped coleslaw mix
  • 2 small cucumbers, julienne cut
  • ¼ cup chopped fresh cilantro leaves
  • ⅓ cup canola oil, olive oil or peanut oil
  • 2 limes, juiced and zested
  • ½ teaspoon garlic powder
  • 2 teaspoons sugar
  • Salt and ground black pepper, to taste
  • ¼ to ½ tsp Red chili flakes, optional
  • Optional Garnishes
  • Peanut Sauce [See Note]
  • Sriracha Sauce
  • chopped peanuts

Directions

  • Add the coconut milk, lime zest, lime juice, fish sauce and ginger into a gallon-size zip top bag or glass dish. Squish bag or whisk to combine.
  • Place skirt steak into the resealable bag. Press out the air and seal the bag shut. Refrigerate for 4 to 12 hours.
  • Preheat grill to high heat.
  • Drain steak and discard marinade. Pat steaks dry and sprinkle with salt. Oil grill grate with a paper towel and some thongs. Place steaks on the grill. Cook 4 -5 minutes per side depending on the thickness of the steaks.
  • Let steaks rest on carving board at least 4 minutes before slicing thinly lengthwise across the grain.
  • For the Slaw:
  • Combine cabbage, cucumbers, peanuts and cilantro in a large bowl. Whisk oil, lime juice, sugar, salt, garlic powder and red chili flake if using in a small bowl. Pour over the vegetable mixture and toss to coat.
  • Prepare Tacos by:
  • Layering sliced meat into the shell, followed by frsh coleslaw and garnishing with peanut sauce, sriracha sauce and chopped peanuts
  • Serves: 4 - 6 servings
