Description

These fluffy, scrumptious streusel-topped bars are full of pumpkin and zucchini! Theyre sugar-free, gluten-free, grain-free, and truly delicious. A THM S style recipe.

Ingredients

  • 1 1/2 cups almond flour
  • 6 tablespoons arrowroot powder (can replace with almond flour if you prefer to follow strict THM - I just did this to lower my costs!)
  • 6 tablespoons oat fiber
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 6 tablespoons Pyure stevia sweetener (or other sugar-free sweetener with the equivalent sweetness of 3/4 cup sugar)
  • 3 eggs
  • 3/4 cup canned pumpkin
  • 1 cup finely grated zucchini
  • 1 tablespoon vanilla extract
  • 3 tablespoons butter or coconut oil, melted
  • 2 tablespoons cold butter
  • 1 tablespoon almond flour
  • 1 tablespoon oat fiber
  • 2 tablespoons Pyure stevia sweetener (or other sugar-free sweetener with the equivalent sweetness of 1/4 cup sugar)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Directions

  • Preheat oven to 350ยบ F and spray a 9 x 9 baking pan with coconut oil baking spray. Whisk together almond flour, arrowroot powder, oat fiber, salt, baking soda, and 6 tablespoons Pyure in a large bowl.
  • Combine eggs, pumpkin, zucchini, and vanilla in a liquid measuring cup.
  • Add liquid ingredients and melted butter to dry ingredients and stir to combine. Transfer batter to prepared pan and level with an offset spatula.
  • To make streusel, pulse together all streusel ingredients in a blender or food processor until fine crumbs form. Sprinkle evenly over batter and bake for 25 minutes, or until the center of the bars springs back when touched and topping is evenly browned.
  • I recommend letting the bars cool for at least thirty minutes before eating - otherwise you can taste the zucchini a little bit. Store bars wrapped in the refrigerator for up to a week.
