Turkey Pesto Pasta Salad

  • 1 1/2 lb Turkey breast

• Produce

  • 3 stalks Celery
  • 2 Honey crisp apples
  • 1/2 cup Pomegranate seeds
  • 1 Red onion, small

• Condiments

  • 1/4 cup Mayonnaise
  • 1/2 cup Pesto sauce, prepared

• Pasta & Grains

  • 16 oz Penne rigate pasta

• Baking & Spices

  • 1 Salt and pepper

Ingredients

• 16 oz. Penne Rigate Pasta (I use DeLallo)
• 2 Honey Crisp apples, cut into chunks
• 1 small red onion, diced
• 3 stalks of celery, diced
• 1 1/2 lb. turkey breast, cubed
• 1/2 cup prepared pesto sauce
• 1/4 cup mayonnaise
• Salt and Pepper
• 1/2 cup pomegranate seeds

Directions

• Make pasta according to directions. Rinse with cold water; drain and chill. Combine all of the ingredients into the pasta, and toss to coat. Refrigerate until ready to eat. Garnish with pomegranate seeds.
