Healthy vegan muffins made with whole grain flours and with the addition of turmeric for a health boost and dose of antioxidants.

Ingredients

  • 3/4 cup quick cooking oats
  • 1/4 cup rye flakes
  • 1 cup stoneground whole wheat flour
  • 1 1/4 cup sprouted spelt flour
  • 2 tbsp ground flaxseed
  • 2 tbsp wheat germ
  • 2 tbsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 5 dates
  • 1/2 cup boiling water
  • 1/2 cup almond milk
  • 1 small banana
  • 1/4 cup applesauce
  • 1 tbsp coconut oil
  • 3 tbsp maple syrup
  • 1 oz fresh turmeric

Directions

  • Begin by placing 1/2 cup boiling water in a dish with 5 dates to soften the dates.
  • While the dates are softening, in a large bowl, stir together quick cooking oats, rye flakes, whole wheat flour, spelt flour, ground flaxseed, wheat germ, cinnamon, baking powder and baking soda. Set aside.
  • In a blender or food processor add the dates, boiling water from soaking, almond milk, banana, applesauce, coconut oil, maple syrup and fresh turmeric. Blend until the dates and turmeric are fully incorporated and the mixture is smooth.
  • Add the date mixture to the bowl of flour and stir to incorporate. Stir in your mix-ins if you prefer such as raisins, coconut or goji berries.
  • Scoop batter into a paper lined muffin tray, filling each one full, and then bake in the oven at 375 degrees Fahrenheit for 25 minutes.
  • Remove and let cool on a rack. Store in an airtight container and enjoy with almond butter for breakfast or snack!
