Ingredients

  • 1 tablespoon olive oil
  • 1 cup carrots, diced
  • 1 cup broccoli florets, chopped small
  • 1/2 cup red bell peppers, diced
  • 1/2 cup green bell peppers, diced
  • 1 cup white mushrooms, sliced
  • 2 cups whole milk (more if necessary depending on thickness and consistency)
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt (or more to taste)
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 cup mozzarella, shredded
  • 1/2 cup provolone, shredded
  • 1/2 teaspoon garlic powder
  • 16 ounces linguine, cooked al dente and drained

Directions

  • Heat olive oil in a large skillet over medium-low heat.
  • Once heated, add carrots and broccoli florets, and cook over medium low heat for 5 minutes, stirring periodically.
  • Add red and green bell pepper, stir and cook an additional 3 minutes.
  • Add mushrooms, stir and cover.
  • Stirring frequently, cook for 8-10 minutes or until all veggies are tender.
  • Once all vegetables are tender, remove from heat and set aside.
  • In a medium sauce pan, whisk together milk and flour. Continuing to stir frequently, heat mixture to a boil over medium high heat. Once the mixture reaches a boil, reduce heat to low and simmer.
  • Add 1/2 teaspoon salt, or more to taste. Mixture will begin to thicken as it simmers.
  • Once mixture thickens to desired consistency. remove from heat.
  • Stir in Parmesan, mozzarella, and provolone. If the mixture is too thick, stir in an additional 1/4 cup of milk.
  • Combine the Alfredo sauce with the skillet of cooked vegetables. Cook mixture an additional 5 minutes stirring frequently.
  • Serve Veggie Alfredo over cooked and drained pasta.
