Vodka and Mango Frozen Cocktails

Ingredients

• ¼ cup caster sugar
• ¼ cup water
• 450g (1 lb) frozen mango chunks (see notes)
• ⅔ cup vodka
• 2 limes
• 1 cup ice
• Lime slices, for garnish

Directions

• Place the sugar and water in a small pan and heat gently until the sugar dissolves. Set aside to cool.
• Remove the mango chunks from the freezer and leave them to soften slightly (about 5-10 minutes).
• Pour the vodka into the food processor, add the mango chunks and then squeeze in the juice from the limes.
• Puree until you have a thick smooth slush.
• Taste and use the sugar water to sweeten to taste (I add it all!)
• Puree once more and then pour into glasses.
• Garnish with lime wedges and serve.
