    • 2 Plantains
  • Condiments

    • 1 Maple syrup, grade B
  • Baking & Spices

    • 1 Cinnamon
  • Oils & Vinegars

    • 2 tbsp Coconut oil

  • 2 plantains green or ripe (depending how sweet you want them)
  • ½ c. fresh or frozen organic blueberries (or more if you want)
  • cinnamon to taste
  • maple syrup grade B
  • 2 T. coconut oil
  • Directions

Directions

  • Melt coconut in large skillet on med to med high heat
  • slice plantains & put into hot oil, sprinkle with cinnamon
  • after brown on one side, flip
  • add blueberries & cook until other side is brown & berries are soft& gooey
  • serve with drizzle of maple syrup
  • Prepare: 5 mins
  • Cook Time: 10 mins
