Clean-eating, nutritious, Asian quinoa protein salad/slaw. Eat for Meatless Monday dinner or every day lunch. Add chicken or pork to this zesty, gluten-free salad.

Ingredients

  • 6 cups shredded Cabbage or 1 lb
  • 1 cup cooked Quinoa or 1/2 lb
  • 1 cup Carrots or 1/4 lb (shredded)
  • 1/4 cup Cilantro (chopped)
  • 1/3 cup Cashews (chopped, toasted)
  • 1 Tbsp Black Sesame Seeds (toasted)
  • 2 Green Onions (finely chopped)
  • 1/2 cup Sesame Ginger Vinaigrette (see recipe above)

Directions

  • Gather ALL ingredients and implement prep steps located next to ingredients (chop, dice, etc).
  • In a large salad bowl, combine CABBAGE, cooked QUINOA, CARROTS, CILANTRO, CASHEWS, SESAME SEEDS, and GREEN ONIONS; cover and refrigerate until ready to serve.
  • To serve, toss veggies in SESAME GINGER VINAIGRETTE.
