Avocado Toast with Asparagus and Strawberries

Ingredients

• 12-16 asparagus spears, trimmed to fit your bread
• 1 tablespoon extra-virgin olive oil
• 1/4 tsp. salt
• 2 avocados
• 4 slices of bread, toasted
• 6-8 strawberries, trimmed and sliced in half
• Fresh mint leaves
• Balsamic vinegar

Directions

• Pre-heat your oven to 425 degrees. Toss the asparagus with the olive oil and salt and spread it out onto a rimmed baking sheet. Transfer the baking sheet your pre-heated oven and roast the asparagus until it’s crisp-tender, about 12 minutes. Remove from the oven and set aside to cool slightly.
• Cut the avocados in half. Remove and discard the seeds. Scoop the flesh out and place it on the toasted bread, using about 1/2 an avocado for each bread slice. Mash the avocado flesh down with the tines of a fork. Top the mashed avocado with a few spears of roasted asparagus, sliced strawberries and fresh mint leaves. Drizzle with balsamic vinegar. Serve and enjoy.
