Bacon Chile Queso

  • 2 10-oz cans Rotel diced tomatoes & chiles

Description

Ingredients

• 2 lbs Velveeta Cheese (or similar)
• 2 10-oz cans Rotel diced tomatoes & chiles
• 1 cup sour cream
• 1 tsp horseradish sauce
• ½ lb bacon
• ½ cup diced green chiles

Directions

• Cut Velveeta into about 1 inch cubes and
• place in crockpot with 2 cans Rotel tomatoes & chiles.
• Turn crockpot on high. Stir at least every 10 minutes
• for the next hour to blend.
• To speed up this process, melt the cheese and tomatoes
• together in a saucepan over medium high heat, stirring
• frequently, for 10 to 15 minutes. Then transfer to crockpot.
• Meanwhile, cook bacon in frying pan until crisp or
• semi-crisp. Place on paper towels to drain.
• Stir in horseradish sauce and green chiles, stirring
• to blend well. Then crumble bacon and stir into the mixture.
• Set the crockpot to warm, and serve in crockpot
• with a giant bowl of tortilla chips.
