Ingredients

  • 1 lb. Pedersons Natural Farms Italian Sausage or Spicy Breakfast Sausage
  • 1 medium sweet potato, cubed small (2 cups)
  • ½ lb. brussels sprouts, quartered (2 cups)
  • 1 bell pepper, diced (1 cup)
  • ½ small red onion, sliced (1/2 cup)
  • 2 garlic cloves, minced
  • 1 Tbsp. avocado oil, ghee or butter (recommend Pure Indian Foods Ghee)

Directions

  • Brown sausage in a skillet on medium high heat, about 10 minutes. Once cooked through, transfer to a paper towel-lined platel.
  • In the same skillet on medium heat, add sweet potatoes and Brussels sprouts. Cover and cook for 5 minutes then uncover and cook for another 5 minutes stirring occasionally throughout the entire time. If veggies begin to stick, add ghee to grease the skillet.
  • Add peppers, onion, and garlic to the skillet and cooked uncovered for 8-10 minutes.
  • Lastly stir in the sausage, heat through, and serve.
