    • 1 1/2 lbs Ground beef
    • 1/2 lb Ground pork

    • 1/2 cup Celery
    • 2 tsp Garlic
    • 1/2 cup Green bell pepper
    • 1/4 cup Green onions
    • 3/4 cup Onions

    • 2 Eggs

    • 1/2 cup Evaporated milk
  • Condiments

    • 1 tbsp Tabasco sauce
    • 1 tbsp Worcestershire sauce
  • Baking & Spices

    • 1 tsp Black pepper
    • 1/2 tsp Nutmeg, ground
    • 1 tsp Red pepper, ground
    • 1 tbsp Salt
    • 1/2 tsp White pepper
  • Nuts & Seeds

    • 1/2 tsp Cumin, ground
  • Bread & Baked Goods

    • 1 cup Bread crumbs, fine dry

    • 4 tbsp Butter, unsalted

  • Seasoning Mix:
  • 2 whole bay leaves
  • 1 tablespoon salt
  • 1 teaspoon ground red pepper (preferably cayenne)
  • 1 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • Other Ingredients
  • 4 tablespoons unsalted butter
  • 3/4 cup finely chopped onions
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped green bell pepper
  • 1/4 cup finely chopped green onions
  • 2 teaspoons minced garlic
  • 1 tablespoon Tabasco sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup evaporated milk
  • 1/2 cup catsup plus extra to top meatloaf
  • 1 1/2 lbs ground beef
  • 1/2 lb ground pork
  • 2 eggs, lightly beaten
  • 1 cup fine dry bread crumbs

Directions

  • Combine the seasoning mix in a small bowl and set aside.
  • Melt the butter in a 1 quart saucepan over medium heat. Add the onions, celery, bell pepper, green onions and garlic, Tabasco, Worcestershire and seasoning mix. Saute until mixture starts to stick excessively, approximately 6 minutes, stirring occasionally and scraping the bottom of the pan. Stir in milk and catsup and continue to cook for two minutes. Remove from heat and allow to cool to room temperature.
  • Preheat oven to 350 degrees. Place the ground beef and ground pork in a large bowl. Crack eggs into a small bowl and beat lightly. Add eggs, cooked vegetable mixture and bread crumbs. Mix by hand until combined, be careful to not over work the meat. Place combined mixture into a loaf pan. Press meat into pan and smooth surface with a knife to ensure it cooks evenly. Top with catsup if desired.
  • Bake uncovered on middle rack of the oven for 25 minutes. Raise heat to 400 degrees and continue cooking until done, approximately 35 minutes. Serve immediately with mashed or baked potatoes.
