Caramel Maple Apple French Toast

  • 3 tsp Vanilla

Ingredients

• 7 small apples, peeled and sliced
• 3/4 cup brown sugar
• 5 tablespoons butter
• 3 teaspoons vanilla
• 1 1/2 teaspoons cinnamon
• 1/4 cup maple syrup
• 3 Egglands Best eggs
• 1 cup milk
• 6-10 slices of bread (I used challah)
• Caramel ice cream topping (optional)

Directions

• Add the apple slices, brown sugar, and 4 tablespoons of butter in a medium sized sauce pan.  Cook the apples over medium high heat until the brown sugar dissolves and the butter melts.  Then add 1 teaspoon of vanilla, 1 teaspoon of cinnamon, and the maple syrup.  Reduce the heat to simmer and cook for 6-10 minutes longer.  Remove from the heat and allow to cool and thicken while you prepare the french toast.
• In a medium sized bowl, whisk together the eggs, milk, 2 teaspoons of vanilla, and 1/2 teaspoon cinnamon. Melt 1 tablespoon of butter in a large skillet over medium heat. Individually dip each slice of bread in the egg mixture and coat completely on both sides.  Then place the bread on the skillet. Work in batches if you dont have enough room on your skillet.  Cook each french toast slice for 3 minutes on each side or until golden brown. 
• When done with the french toast, top with the apples and syrup mixture.  If desired, also drizzle some caramel ice cream topping on top of the apples.  Serve while warm.
