Ingredients

• 1 cup whole wheat flour
• 1 cup oats
• 1 tsp baking soda
• ½ cup brown sugar
• ½ cup vegan sugar
• 1 cup Earth Balance
• 1 tsp vanilla
• 1 ripe banana
• 1 tsp cinnamon
• ½ cup grated carrots
• ⅓ cup raisins

Directions

• Preheat the oven to 350.
• Mix together the flour and oats in a small bowl.
• Cream together the sugars, butter, vanilla, and banana with a hand mixer in a large bowl.
• Add the dry ingredients to the creamed and mix together well and fold in the carrot and raisins.
• Use a tablespoon sized scoop and scoop onto a baking sheet.
• Bake for 8-10 minutes on a baking sheet covered in parchment paper.
• Let cool and enjoy!
