Ingredients

  • 3 cups plain flour
  • 1 teaspoon baking powder
  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • Hard candies or crushed lollipops (Yummy Earth has a really great line to pick from!

Directions

  • In a medium bowl, stir together the flour and baking powder and set aside.
  • In the bowl of an electric mixer, cream together the butter and sugar until light and fluffy, about 3 mins. Add the egg and vanilla and beat.
  • Add the flour mixture slowly. Be careful not to add too much at a time or you will have a snowstorm of flour. Blend until all of the flour is incorporated and the dough begins to pull away from the sides of the bowl.
  • Take the dough out of the bowl and knead it. Cover and chill for 2 hours.
  • Remove dough from fridge and preheat oven to 350F. Place dough on a lightly floured surface and roll out to about 1/3” thick. Cut your cookies out using cookie cutters and use a smaller cookie cutter to make the ‘window’. Place 2 hard candy in each ‘window’, making sure to be generous as they don’t spread out a lot. (My cookies were about 10cm in diameter, and the windows were about 5x3cm).
  • Bake cookies for 8-10 minutes. Watch closely and bake until they are barely beginning to take on a golden tone. Cool for 10mins on the trays before transferring to a wire rack.
  • Just one tip with the hard candy: don’t be sparing. They don’t spread very much. For the Christmas trees (the size of the tree is about 5x3cm), I used 2 lollipops each but you could add more if you wanted to. You’ll end up with gaps if you don’t put enough of the hard candy in the cut out (and trust me, I ended up with many gappy ones before I got proper ones!).
