  • Wet ingredients:
  • 1 chia egg (1 tablespoons ground chia + 3 tablespoons water in fridge for 15 minutes)
  • 3 medium ripe bananas, mashed
  • 2 tablespoons maple syrup
  • ⅓ cup apple sauce (I used unsweetened organic)
  • Dry ingredients:
  • 1 cup gluten-free flour (or 1 cup of Enjoy Life Foods Baking Flour)
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • Add-ins:
  • ½ cup Enjoy Life Foods Chocolate Chunks

Directions

  • Preheat oven to 350 degrees and line a muffin tray
  • Mix together wet ingredients with Kitchen Aid or mixer in medium bowl
  • In small bowl, mix together dry ingredients
  • Add dry mixture to wet mixture and mix well
  • Stir in chocolate chunks
  • Evenly pour into each muffin and bake for 15-20 minutes (toothpick should turn out clean)
  • Serves: 11 muffins
