Ingredients

  • 3 lbs of Ground Beef
  • 2 tablespoons Olive Oil
  • 1 ½ chopped Yellow Onion
  • 1 ½ chopped Green Bell Pepper
  • 3 cloves Garlic
  • 2 chopped Roma Tomatoes
  • ½ cup Tomato Sauce
  • ¼ cup Olives
  • 1 teaspoon Capers
  • ½ cup of Dry Red Cooking Wine
  • 2 Bay Leaves
  • 1 15oz can of Peas
  • ½ cup Raisins
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • ½ cup chopped Cilantro

Directions

  • Mix all dry spices together in a bowl – cumin, oregano, salt, and pepper. Make sure to mix well.
  • Combine 2 ½ teaspoons of spice mixture to raw ground beef. Massage into meat and let sit at room temperature while preparing other ingredients (at least 20 min)
  • Heat pan with 2 tablespoons of olive oil at medium-high heat
  • Add onions and bell peppers to pan and sauté until onions are translucent (about 2-3 min)
  • Add minced garlic and mix together. Cook for another 2 min
  • Add chopped tomatoes, tomato sauce, and 1 ½ teaspoons of spice mixture. Cook for another 2-3 min
  • Add capers, olives, bay leaves, and ¼ cup of wine. Cook for another 4-5 min
  • Remove mixture from pan and set aside.
  • Add meat to pan and brown. This should take about 5 min. If there is a lot of liquid in pan you can remove. Meat shouldn’t be completely dry, but you also don’t want it sitting in a pool of liquid. Liquid should not come above meat.
  • Once meat is browned add sauce mixture back to pan. Also add remaining spice mixture (1 tablespoon) and ¼ cup of wine. Cook for about 4-5 min
  • Add peas and raisins to pan. Cook for an additional 2-3 min
  • Top with fresh cilantro and mix well
  • Serve with steamed rice and top with a fried egg(optional)!
