• Take all the ingredients listed under To Soak in a bowl, pour orange juice just enough to cover them and let it soak atleast for 2 hours. It can be soaked up to a day but inside refrigerator. Preheat the oven to 350 F / 180 C / 160 Fan / Gas Mark 4. Prepare the cake pan by greasing and flouring it. I have used 9 X 5 loaf pan. In a bowl, sift together all the Dry Ingredients together and keep it aside. In another bowl, mix yogurt and dark muscavado sugar well. Then add honey, milk, oil and vanilla extract and mix well. Now add the flour mixture little by little to the yogurt mixture and mix well till they are fully combined. Now drain the soaked dry fruits and nuts and add them to the cake batter and mix till they are evenly distributed in the batter. Pour the cake batter into the prepared cake pan and bake for 30 minutes. Then reduce the oven temperature to 325 F / 170 C / 150 Fan / Gas mark 3 and bake for another 20 - 30 minutes till the cake is done. Remove the cake from oven, let it cool for 5 minutes then remove from the cake pan and then let it cool completely. Then slice and serve.
