Eggnog - Dairy Free, Sugar Free

  • 1/3 cup Egg whites

• Baking & Spices

  • 1 1/2 tsp Blend or homemade sweetener, Sweet
  • 1/4 tsp Nutmeg
  • 1 pinch Salt
  • 1 tsp Vanilla extract

• Oils & Vinegars

  • 1 tbsp Coconut oil

• Dairy

  • 1 cup Cashew milk

• Beer, Wine & Liquor

  • 1/4 tsp Rum extract

  • 1 tablespoon collagen (optional
  • ¼ teaspoon sunflower lecithin (optional - see note

Ingredients

• 1 cup cashew milk
• ⅓ cup egg whites (carton)
• 1 tablespoon coconut oil
• 1½ teaspoon Sweet Blend or homemade sweetener*
• 1 teaspoon vanilla extract
• ¼ teaspoon rum extract
• ¼ teaspoon nutmeg
• pinch of salt
• ¼ teaspoon sunflower lecithin (optional - see note)
• 1 tablespoon collagen (optional)

Directions

• Put all ingredients in a medium saucepan and then turn burner on medium-low heat. Whisk ingredients continuously while warming up. Keep whisking. The eggs could separate and curdle if you dont keep whisking. When its warm and the coconut oil has melted its done. Serve warm.
• If you add the sunflower lecithin it can also be chilled.
