Its hot, and the last thing you want to do is slave away in the kitchen. Heres a summer salad recipe sure to impress, full of delicious cooling zucchini, mint and farm-fresh yoghurt.

Ingredients

2 large zucchinis, thinly sliced or grated
100 ml natural yoghurt (adjust according to desired texture (ie not too runny)
1 handful mint, finely chopped
1 clove garlic, finely chopped
Salt and pepper to taste

Directions

Place grated zucchini into a large serving bowl.
Mix through the mint, garlic and enough yoghurt so that the desired texture is reached. The salad mixture should stick together nicely without being too runny.
Season to taste with salt and pepper.
