  • 3 cups of self rising flour
  • 1 teaspoon of sugar
  • 1 teaspoon salt
  • 1 stick of unsalted butter plus 1/3 cup
  • 1/2 cup of buttermilk
  • 1 large egg
  • 1 -2 tbs whole milk add 1 tsp at a time if more milk is needed
  • *Spicy Honey Butter*
  • 1 stick butter room temperature
  • 3 -4 tbs red hot hot sauce
  • 1/2 teaspoon cayenne pepper
  • 2 -3 tbs honey
  • *Chicken Brine*
  • Warm water (just enough to cover chicken
  • 1/4 plus a half of 1/4 cup salt
  • 1/2 cup hot sauce (optional)
  • 2 tbs hot sauce (optional)

  • 5 chicken breasts split to make 10 thinner chicken breasts (flattened using a mallet)
  • 2 1/2 cups of flour
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 teaspoons of salt
  • 2 teaspoons pepper
  • 1/4 teaspoon of garlic powder
  • 2 teaspoons paprika

Directions

  • *Biscuits Instructions*
  • Preheat oven to 425 F.
  • Add lightly oiled parchment paper to your baking pan.
  • In a large bowl, whisk together the flour, sugar, salt. Add the cubes of butter and cut cubes in the butter until the pieces are no bigger than peas – the mixture should resemble coarse meal. Whisk the egg and buttermilk together until combined. Add Buttermilk and egg mixture to the flour mixture and gently stir the the buttermilk/egg mixture into the flour until the dough starts coming together.
  • Turn the dough onto a lightly floured work surface and gently roll out dough to an inch thick and cut with a 3 inch cutter. Place biscuits in the pan on top of the lightly oiled parchment paper. Add the biscuits close to each other until touching and also touching the edges of the pan (this helps the biscuits to rise) Liberally brush melted butter on top of biscuits.
  • Bake at 425 for 15-20 minutes or until golden. Cut the biscuits open spread the spicy honey butter and chicken then serve.
  • Makes about 9 biscuits.
  • *Honey Spicy Butter Instructions*
  • To a bowl add the honey, hot sauce and butter and cayenne pepper. Using your whisk together until incorporated taste and add more honey or hot sauce if necessary.
  • *Brine Instructions*:
  • Add water to a large bowl or pan then add salt, cayenne pepper and hot sauce. Whisk until salt and seasonings dissolve into the water. Add the flattened chicken breast and make sure the chicken is covered completely with the water
  • Cover for 30 minutes.
  • *Fried Chicken Instructions*:
  • Prepare the flour and mixture adding the flour to a large ziploc bag or paper bag or bowl. Add all
  • the seasonings and mix until seasonings and flour is combined.
  • Add buttermilk and eggs to a bowl (I used a rectangular shaped container the size of a loaf pan)
  • take a chicken breast and coat it with the egg then into the flour then back into the egg/milk mixture.
  • then back into the flour. Continue until all the chicken is coated. Let the coated chicken rest for 10-15 mins.
  • Add oil to the deep fryer or frying pan. Just enough to coat chicken.
  • Fry in the deep fryer for about 6-7 min ( I was able to only fit 2 at a time in my deep fryer)
  • Remove chicken and place on a cooling rack with paper towel underneath.
  • Once chicken is drained add it to a warm oven until ready to use.
