Gluten-Free Apple Crisp recipe chock-full of warm gooey apples and topped with an easy, quick-to-make gluten-free crust. Your guests will never know it is gluten-free, vegan and even lower-sugar!

Ingredients

  • 8 medium apples, peeled, cored and chopped. (Your favorite apple variety will work)
  • 1/8 cup cornstarch
  • 1/8 cup sugar (optional)
  • 1/2 Tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 oz gluten-free snickerdoodle cookies of choice
  • 3 Tablespoon butter or dairy-free option
  • 3/4 cup quick cooking oats
  • 1/2 cup gluten-free baking flour
  • 6 Tablespoons butter or dairy-free option
  • 1/4 cup brown sugar
  • 1/2 Tablespoon cinnamon

Directions

  • Preheat oven to 475 degrees F
  • In a food processor, pulse together snickerdoodle cookies and butter. Press into 9inch pie pan. Set Aside
  • In a large bowl, mix together apples, cornstarch, sugar (optional), cinnamon, nutmeg. Pour into pie pan.
  • In food processor, pulse together oats, flour, butter, brown sugar and cinnamon. Crumble over apples.
  • Bake for 40-45 minutes. Keep an eye on the crust, if it starts to turn dark brown, cover with aluminum foil.
  • Best when served warm.
