Ingredients

  • ⅔ cup warm water
  • 1 cup unsweetened natural cocoa powder
  • ⅔ cup oil
  • 2 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups sugar
  • 1 cup rice flour
  • 1 cup tapioca flour
  • ¼ cup potato starch
  • 1 teaspoon xanthan gum
  • 2 teaspoon baking powder

Directions

  • Preheat oven to 350 degrees. Grease a 13 x 9 pan.
  • Heat water.
  • Combine hot water and cocoa powder. Set aside.
  • In a large bowl, combine rice flour, tapioca flour, potato starch, xanthan gum, baking powder and sugar.
  • Add oil, eggs, and vanilla to cocoa mixture. Stir to thoroughly combine.
  • Add the cocoa mixture to the flour mixture and stir well to combine.
  • Spread brownie batter in a greased 13 x 9 pan. Bake at 350 degrees for 25 minutes.
  • Allow to cool completely before serving.
