These fun, bite-sized treats, made with our gluten-free baking mix, are quick and easy to put together, perfect for an impromptu gathering. Even better, you wont sacrifice taste for simplicity. Theyre delicious as is, but if youre looking for a richer variation, try pairing them with a flavorful topping, like onion dip or spicy mayo (a pinch of cayenne pepper stirred into 1/2 cup mayonnaise). Serve these for breakfast, brunch, cocktails, or pre-dinner snacks — and be ready to see them disappear as quickly as they came together. Note: Please read and follow the recipe carefully; it calls for our gluten-free all-purpose baking mix, NOT our gluten-free multi-purpose flour.

Ingredients

  • 1 pound uncooked breakfast sausage
  • 2 cups grated cheddar cheese; we prefer Cabot sharp or extra-sharp
  • 1/4 cup chopped fresh or dried chives
  • 2 cups (8 1/2 ounces) King Arthur Gluten-Free All-Purpose Baking Mix
  • pinch of cayenne pepper, optional; for kick
  • 2 large eggs

Directions

  • Preheat the oven to 350°F. Lightly grease a baking sheet, or line it with parchment. Stir together all of the ingredients in a large bowl, mixing until well combined. Roll the mixture into 1 balls; a tablespoon cookie scoop works well for portioning. Place the balls onto the prepared baking sheet, leaving about 1 between them. Bake the bites for 18 to 20 minutes, until theyre golden brown. Remove them from the oven, and cool slightly before serving. Store any leftovers in the refrigerator for several days; freeze for longer storage. Yield: about 36 bites.
