Homemade Oreo Cookies

Ingredients

• ¾ cup Butter (1½ sticks), softened
• 1 cup Sugar
• 1 Egg
• 1 teaspoon Vanilla
• ¼ cup + 2 Tablespoons Cocoa Powder
• 1½ cups Flour
• ½ teaspoon Baking Soda
• ⅛ teaspoon Baking Powder
• ½ teaspoon Salt
• Sweet Buttercream Filling:
• ¾ cup Butter, softened
• 1½ cups Powdered Sugar
• 1 teaspoon Vanilla

Directions

• Heat oven to 350 degrees.
• In large bowl, cream together butter and sugar until light and fluffy -- about 4 minutes.
• Add egg and vanilla and beat until creamy. Scrape down the sides of the bowl.
• Add cocoa, flour, baking soda, baking powder, and salt.
• Using a scoop, drop 12-16 cookies onto cookie sheet. Sprinkle with sugar.
• Bake for 13-16 minutes.
• Remove from oven and let cool.
• In large mixing bowl, cream butter and powdered sugar until light and fluffy. Add vanilla.
• Spread sweet buttercream filling on bottom of cookie. Top with second cookie.
