Preheat oven to 350 F. Meanwhile, cut peaches in halves and get rid of the stones. Line a baking pan with parchment paper and arrange peach halves on it leaving enough space between them. Spoon a little butter atop of each peach halve and drizzle with honey. Bake for 20 minutes. In a mixing bowl, combine mascarpone, double cream and vanilla extract. Stir to combine. Serve peaches warm, with mascarpone or ice cream atop, sprinkle with toasted almonds, if desired.
