Huevos Rancheros with Guacamole

• Produce

  • 1 Avocado, large ripe
  • 2 Bay leaves
  • 1 handful Coriander, fresh leaves
  • 2 Garlic cloves
  • 1/2 Lime, Juice of
  • 1 Onion, large
  • 4 large handfuls Spinach
  • 2 Spring onions

• Refrigerated

  • 4 Eggs

• Baking & Spices

  • 1 pinch Cayenne pepper
  • 1 tsp Paprika, smoked
  • 2 Red peppers
  • 1 Sea salt and black pepper

• Oils & Vinegars

  • 1 tbsp Ghee or coconut oil
  • 1 tbsp Olive oil, Extra Virgin

• Dairy

  • 1 small handful Mature cheddar, grated

• Liquids

  • 200 ml Water

• Other

  • 1 large handful Of fresh coriander, leaves and stalks roughly chopped
  • 2 X 400g tins of tomatoes or 800g fresh tomatoes
