  • Stew meat ingredients:
  • 2 tablespoons, vegetable oil
  • 2 pounds stew meat
  • Roux ingredients:
  • 1 medium onion, chopped
  • 2 tablespoons tomato paste
  • 3 tablespoons, flour
  • 1 bay leaf
  • Vegetables & tomato ingredients:
  • 3 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 4 stalks celery, chopped
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes (adsbygoogle = window.adsbygoogle || []).push({});

Directions

  • Stew meat instructions: Preheat large pot and add oil to lightly coat the bottom. Sear stew meat in single layers to caramelize meat. Remove meat and set aside.
  • Roux instructions: Add onions to same pot using any oil left. Cook until translucent and caramelized. Next, add tomato paste to onions and cook for a few minutes. Add 3 tablespoons of flour to make a roux. This will help thicken stew and give it body.
  • Now add browned stew meat to mixture and season with salt and pepper, and then add in bay leaf. Next, add enough water to cover meat and bring to a boil. Cover and simmer for 2 hours or until meat is fork tender.
  • Adding vegetables & tomatoes: Add carrots, potatoes, celery, tomato sauce and diced tomatoes. Simmer for approximately 15 minutes or until vegetables are cooked.
