Funny name, delicious biscuit! Loretta gave them this unusual name because when her husband "Doo" made them, he dropped such huge amounts for each biscuit onto the baking sheet. She said they were as big as cat's heads!:)The thing I love about these is that they only require 3 ingredients. That's almost as easy as popping open a can! They are also soft as velvet and delicious. My husband actually called them the best biscuit ever. And that's a lot coming from such a picky eater. Sorry babe! :)

Simple biscuits made the way they have been as long as there has been American cowboys, using the least effort necessary. Made using nothing but self-rising flour, lard and milk or other liquid. They come out the shape of a cat's head, thus the name.

Directions

  • Preheat oven to 400 degrees F.In a large bowl, combine the flour and shortening. A pastry cutter works great for this!Add buttermilk, stir until combined.Place the dough onto floured surface. You may need more flour on the counter than you think. This is a very sticky dough! But the extra flour does not make the biscuits end up dry.Drop in big cat head sized spoonfuls onto your baking sheet like Loretta's husband, or use a biscuit cutter or drinking glass and cut out 12 neat ones.:)Bake for 15 minutes, or until golden brown.Enjoy!
  • Stir up the dough on newspaper so cleanup is simple.Roll the dough into a skillet and cut one biscuits with a glass (called the cook's biscuit) and eight around a spatula. Bake at 400 degrees F for 20 minutes.
