Description

Besides using this on dan dan noodles, you can serve it on rice, bread, udon noodles or use it as a pasta sauce.Make a batch and freeze it to use it any time you like.

Ingredients

  • Ground meat (any meat)
  • Finely chopped garlic
  • Ginger, finely chopped
  • Japanese leek (or onion), finely chopped
  • Doubanjiang
  • Sake (or Shaoxing wine)
  • Soy sauce
  • Hatcho miso (or tianmianjiang)
  • Sesame paste (or zhimajiang)
  • Vegetable oil
  • Salt and pepper

Directions

  • 1. Heat vegetable oil in a pan, and stir fry the finely chopped garlic and ginger.
  • 2. Add the finely chopped leek (or onion) and stir fry.
  • 3. Add the ground meat, and stir fry until cooked through.
  • 4. Add the doubanjiang, and stir fry well to bring out the spiciness.
  • 5. Add the sake, miso, sesame paste and soy sauce, and adjust the seasoning with salt and pepper.
