  • ⅔ cup olive oil
  • ¼ cup fresh lemon juice, about 1 lemon
  • 1 clove garlic
  • Pinch of salt and pepper plus additional to taste

Directions

  • Process all ingredients in a food processor or blender until creamy or desired consistency.
  • Before serving drizzle with a little olive oil if desired.
  • Serve with pita chips, carrots, tortilla chips or wedges of fresh pita bread.
