Ingredients

  • For the Natural Raspberry Coloring and Flavoring
  • 1 recipe Homemade Raspberry Syrup, recipe by Wicked Good Kitchen
  • For the Natural Strawberry Coloring and Flavoring
  • ½ cup (10 grams) organic freeze-dried strawberries, such as Just Tomatoes® brand
  • For Pink Natural Colored and Flavored Coarse Crystal Sugar
  • ¾ cup (about 192 grams) coarse crystal sugar, such as Sparkling White Sugar, by King Arthur Flour®, or raw sugar crystals
  • 6 teaspoons (6 grams) powdered organic freeze-dried strawberries
  • 1 tablespoon (15 ml) Homemade Raspberry Syrup
  • Natural red and/or pink gel based food coloring, such as CHEFMASTER®
  • For Pink and Red Natural Colored Granulated or “Sanding” Sugar
  • ¾ cup (150 grams) granulated cane sugar
  • Natural pink and/or red gel based food coloring, such as CHEFMASTER®
  • For Clear Coarse Crystal Sugar
  • 4 tablespoons (¼ cup/about 64 grams) coarse crystal sugar, such as Sparkling White Sugar, by King Arthur Flour®, or organic raw sugar crystals

Directions

  • Prepare the Homemade Raspberry Syrup: Follow recipe for Wicked Good Kitchen’s Homemade Raspberry Syrup.
  • Prepare the Powdered Strawberries: In a mini food processor, process organic freeze-dried strawberries until powder-fine. Pour powdered strawberries into fine mesh sieve placed over a small to medium sized bowl. Sift the powdered strawberries to remove larger pieces. Store powder-fine freeze-dried strawberries in zip-top plastic food storage bag until ready to use.
  • Prepare Pink Natural Colored and Flavored Coarse Crystal Sugar: Make three (3) batches ranging in pink hues. For each batch, combine ¼ cup (64 grams) coarse crystal sugar and 2 teaspoons powder-fine freeze-dried strawberries and mix until well blended. Stir in 1 teaspoon Homemade Raspberry Syrup, or use a zip-top plastic food storage bag, and mix until well combined. Using a bamboo skewer or toothpick, add desired amount of gel food coloring (about 1 to 6 drops from toothpick depending on color tint desired) and mix (or massage in bag) until thoroughly blended, about 3 to 5 minutes.
  • Pour sugar onto parchment or wax paper lined baking sheet. Using a rubber spatula, carefully spread the sugar (without crushing the crystals) out into a thin layer to air dry until completely dried. I like to place the baking sheets on the desk in my home office and leave them undisturbed (behind closed doors) to air dry overnight. This way, the color and flavor will not be blunted or compromised by the application of heat in the oven.
  • Prepare Pink and Red “Sanding” Sugar: Make three (3) batches ranging in hues of pink and/or red. For each batch, combine ¼ cup (50 grams) granulated sugar and 1 to 6 drops of red or pink natural gel based food coloring, depending on intensity of color tint desired, in a zip-top plastic food bag. Blend well by mixing (massaging) until thoroughly blended, about 3 to 5 minutes.
  • Pour sugar onto parchment or wax paper lined baking sheet. Using a rubber spatula, carefully spread the sugar out into a thin layer to air dry until completely dried.
  • After drying completely, the sugar crystals and “sanding” sugars are ready to use in recipes or to combine and blend together to make Pink Fairy Dust Sugar Crystals.
  • To Prepare 1 cup (192 grams) of Pink Fairy Dust Sugar Crystals: Combine 4 tablespoons (¼ cup or 48 grams) each of three (3) pink colored and flavored coarse sugar crystals with 4 tablespoons (¼ cup or 64 grams) coarse crystal sugar, such as Sparkling White Sugar by King Arthur Flour®. Add about ¼ teaspoon each of the granulated tinted decorating “sanding” sugars. Mix until well blended and use immediately in recipes.
  • Serves: Makes 1 cup (192 grams) Pink Fairy Dust Crystals. Or, makes ¼ cup of each batch of sugar (crystal and granulated); about 48 to 50 grams each, to be combined as recommended for Pink Fairy Dust Crystals (or as desired).
