One Pot Creamy Chicken Orzo

  • 2 Chicken breast, boneless skinless

Ingredients

• 2-3 boneless skinless chicken breast
• 2 cups of orzo pasta
• 1 small onion, diced
• 1 can cream of chicken soup
• 1 can sliced mushrooms
• 1 can Italian Flavor diced tomatoes (drained)
• 2 cups chicken broth
• 1 teaspoon Italian Seasoning
• 1 teaspoon garlic powder
• ½ teaspoon oregano
• ½ teaspoon basil
• salt and pepper to taste

Directions

• Cut two or three chicken breasts into bite size pieces and then seasoning them with salt.
• While you are cutting up the chicken warm up olive oil in the bottom of the pot.
• Place the chicken in the warm pot and cook for about five minutes or until cooked through.
• Add in chopped onion and garlic cook for two minutes.
• When the chicken it cooked add Italian Seasoning, Oregano, Basil and fresh ground black pepper to the chicken and toss everything together.
• Then add a can of cream of chicken soup, chicken broth, and can of Italian flavor diced tomatoes (drained), and sliced mushrooms. Stir everything together and let the mixture cook for a minute or two.
• Stir in two cups of orzo pasta and bring the pot of a boil.
• Reduce the heat to low, cover and let cook for 10 minutes.
• At the end of the 10 minutes add in grated parmesan cheese and stir in allowing the cheese to melt. Garnish with additional cheese or parsley if desired.
