Orange Blueberry Muffins

  • 1 1/4 cups Blueberries, fresh
  • 1 tbsp Orange, zest

  • 1 tbsp Baking powder
  • 2 cups Flour
  • 3/4 cup Powdered sugar
  • 1/2 tsp Salt
  • 3/4 cup Sugar
  • 1 tsp Vanilla extract

  • 3 4 cup orange juice + 4 teaspoons

  • 1/2 cup Butter
  • 1/4 cup Milk

Directions

• Beat the butter and sugar until creamy. Add the vanilla and eggs and beat again.
• Sift together the flour, baking powder, and salt. Add alternately with the milk and 3/4 cup orange juice until combined. Do not over mix.
• Stir in the blueberries and orange zest by hand. Spoon into 15 muffin liners. Bake at 350 degrees for 18-20 minutes. Remove and let cool.
• Whisk together the powdered sugar and 4 teaspoons orange juice. Dip the tops of the cooled muffins into the glaze. Let set. Store loosely covered in a container on the counter. Do not cover tightly as the glaze will soak into the muffins and make them sticky. Makes 15 muffins.
